Healthy Recipes

To try to be more healthy and transition to a more balanced lifestyle our family has made some changes to several things, including our food. Now Aila and my mom cook breakfast, I cook lunch, and my mom cooks dinner. As I have been cooking every day I wanted to make a list of the recipes and dishes that I cook and add to it whenever I can.


Tuesday, November 16th - Taco Bowl

This recipe is essentially a salad topped with stuff you would normally find in a taco. You can change it around however you like, but this is how I made it.




Ingredients:

  • Ground Beef

  • Lettuce

  • Cucumbers

  • Peppers

  • Avocado

  • Tomatoes

  • Onions

  • Cheese (Optional)


Steps:

  1. Cook the ground beef with chopped onion adding whatever seasoning you like

  2. Chop the lettuce and put it at the bottom of the bowl

  3. Thinly slice cucumber and place it on top of the lettuce

  4. Chop up peppers and place it on top of the lettuce as well

  5. Place the cooked ground beef on top of the lettuce as well

  6. Make homemade guacamole or buy it here’s how I made it:

    • Mash avocado into a bowl

    • Add diced onions, tomatoes and cucumber until it is like chunky guacamole

  7. Place guacamole in the middle of the taco salad and garnish with parsley and cheese


Wednesday, November 17th - Chicken with Veggies

In this recipe you can really use any type of vegetables you would like but I used peppers and zucchini.




Ingredients:

  • Zucchini

  • Egg

  • Cheese (optional)

  • Peppers

  • Chicken


Steps:

  1. Cook your chicken in a pan until it is done the seasonings I put on was salt, pepper, garlic powder, paprika, and cumin (I used chicken breasts but any type of chicken works)

  2. Grate your zucchini and then squeeze out the water

  3. Add eggs and cheese (optional) until all the zucchini is coated and then cook until done

  4. Then chop up your peppers and season with salt, pepper, cumin, and garlic powder and then saute until done


Thursday, November 18th - Chicken Salad

I was feeling kind of lazy so I just made a salad that is super simple.




Ingredients:

  • Lettuce

  • Chicken

  • Peppers

  • Lemon Juice

  • Olive Oil


Steps:

  1. Chop the lettuce and put it at the bottom of the bowl

  2. Cook the chicken with salt, pepper, cumin, and garlic powder until it is done

  3. Slice it and place on top of the lettuce along with raw sliced peppers

  4. Mix lemon juice, olive oil, salt, and pepper in a bowl with whatever proportions you want depending on how sour or salty you want it to make a dressing

  5. Put the dressing on the salad and it’s done


Friday, November 19th - Ham and Bacon Egg Scramble

This recipe is really easy and you can change it however you would like.




Ingredients:

  • Ham

  • Bacon

  • Egg

  • Spinach

  • Peppers


Steps:

  • Cook the bacon and spinach until it is done and add to a bowl

  • Then chop ham and peppers and add them to the bowl as well

  • Mix with however many eggs you would like depending on how many people you are cooking for and how much egg you want compared to the other ingredients

  • Throw it all into a pan and add salt, pepper, and garlic powder until it is done and then serve!

In this article I will be adding all the recipes I cook for lunch for my family. Most of the time I just look in our fridge and then come up with something random. The recipes usually take 15-30 minutes to make and are super easy if you cook things like chicken and other things ahead of time so all you have to do is throw everything together. I designed a weekly meal plan in Canva that you can use as well to just plan out what you are going to make for the week:
